Irish Coffee

Ingredients

1 Measure (3 cl) of Irish Whiskey
1 teaspoon of raw sugar
1 heaped desertspoon of whipped cream
Hot strong coffee to fill the glass

Pre-warm a stemmed glass. Add the whiskey.
Add the sugar and stir in the coffee.
Float the whipped cream on top.
Drink the coffee through the cream (ie do not stir after adding the cream).

Traditional Brown Bread

Ingredients

600 grams of brown wholemeal flour
180 grams of plain (white) flour
2 teaspoons of baking soda
1 teaspoon of salt
1 tablespoon of soft brown sugar
2 tablespoons of olive oil
0,6 litre of buttermilk (sour milk)

Method

Sieve the plain flour and baking soda in to a bowl.
Add the wholemeal flour, salt and brown sugar and mix well.
Add the olive oil and buttermilk and mix well for 2 minutes with a wooden spoon.
Lightly oil a 1kg loaf tin. Add the mixture. Put in a preheated oven at exactly 180c

Old Stone House Breakfast Scones
 

INGREDIENTS

  Plain Flour     2-1/2 cups / 11 oz / 260g
         Salt     1/2 teaspoon
       Butter     2 Tbsp / 1 oz / 25g
        Sugar     2 Tbsp / 1 oz / 25g
Baking Powder     2 teaspoons
      Raisins     1/2 cup / 2 oz / 50g
         Milk     7/8 cup / 7 fl oz / 200 ml

 Preheat oven to 400° F / 200° C / gas 6.

Sieve flour and salt into a bowl. Rub in the butter with your fingers or a pastry blender. Add the sugar, baking powder and raisins and mix together well.

Add the milk and mix into a loose dough. Turn onto a floured board and knead until smooth (about 10 times). Roll out; cut the dough in half, then into quarters and then into eighths.

Place on a lightly floured baking sheet, then brush the top of each scone with milk and sprinkle with sugar.

Bake for 15 to 20 minutes. When done, transfer to a wire rack to cool.

Irish Cheesecake

Ingredients:
1.5 cups chocolate cookie crumbs (about 42 1.5inch chocolate snaps) 1 tbsp. sugar
2 tbsp. butter, melted 2 (8-oz) pkgs cream cheese at room temperature
1 cup sugar 3 eggs
1/4 cup creme de menthe 2 tbsp. white creme de cacao
4 oz. sweet cooking chocolate 1/2 cup dairy sour cream

Preparation

In a small bowl, combine crumbs, 1 tbsp. sugar and melted butter. Press on bottom and 1.5 inches up the side of an 8-inch springform pan; refrigerate. Preheat oven to 350F (175C). In a large mixer bowl, cream the cheese and 1 cup sugar. Add eggs, beating until smooth. Stir in creme de menthe and creme de cacao. Pour into prepared crust. Bake 40 to 45 mins. Cool in pan. Melt chocolate; cool about 5 mins. Stir sour cream into melted chocolate. Spread over slightly cooled cheesecake. Refrigerate until set. Remove side of pan.

Serves: 8-10

St. Patrick's Day Quickie

Ingredients -

  • 1 pound ground beef (fry until brown)
  • 2 cans tomato sauce
  • 1/2 pound noodles (boil 6 minutes)
  • 8 ounces cream cheese
  • 1 pint cottage cheese
  • 1/4 cup sour cream
  • 1 green bell pepper (chopped)

Directions -

Mix cream cheese, cottage cheese, sour cream and
chopped bell pepper. Put noodles in casserole dish.
Add cheese mixture. Put browned meat on top.
Bake 1/2 hour at 350 degrees
Soda Bread
(Makes 1 large or 2 small loaves)

INGREDIENTS

574g/ 4 cups (1.25 lbs. plain flour sieved)

1/2 teaspoon bread soda

15 fl oz (1/2 to 3/4 pt buttermilk)

or sour milk

1/2 teaspoon salt

1 egg

Small drop of fresh milk

1 rounded teaspoon Bextartar

25g/loz. sugar

 

METHOD

  1. Heat the pot/oven and grease with a little lard.
  2. Mix all the dry ingredients in a basin and make a well in the centre.
  3. Pour in nearly all the milk and egg; gather in the flour and mix to a loose dough, adding more milk if necessary.
  4. With floured hands, knead lightly on a floured board or table and flatten out. Cut a cross on top.
  5. Place dough in pot/oven; cover with heated lid. Place hot coals on top to give all round heat.

Alternatively bake in a greased round pyrex dish with lid, pre-heat over (4250F, 2200C or gas 7 for 40 minutes).

To keep the bread soft, wrap in a clean damp tea towel when it is taken out of the oven.

 

 

Variations
Sultana Cake:


Half-cup of sultanas are added to the dry ingredients.

 

Treacle Soda Bread

 

Make as above, but 2 tablespoons of black treacle (molasses) is heated with the milk and 1 tablespoon of sugar is added to the dry ingredients.

 

Brown:

 

Make as above but use 1 lb. (4 cups) whole- wheat flour and 2 cups (0.5 lb). plain white flour. A little more milk is used to mix the dough.

 

Apple Cake:

 

Place half the dough in pot/oven; add sliced cooked apple and sweeten with sugar. Cover with remaining dough. Press edges together; cover and bake in the same wa
